ABOUT THE COURSE

During our Autumn courses at Ewhurst Park, we expect to find some of the best wild cuisine this area has to offer. From Trompettes de la Mort to Chanterelles, Oysters, Boletes and Agarics plus a few deadly species – which you simply must learn about too!
The Ewhurst Park team have embarked on an estate-wide biodiversity project, caring for the ancient woodland, meadows and the beautiful lake which teems with wildlife. This venue is a truly special place, not only for beginning your foraging journey, but also to broaden any knowledge you already have about Nature’s bountiful larder.

Our Foraging Courses begin with a short introduction to Wild Food UK, what to expect from your day and a brief summary of the general countryside codes, including our Foraging Code.

Heading off at a leisurely pace around the grounds, your instructor will teach you how to safely identify the different species of edible and poisonous plants and mushrooms that you discover.
This exploration will take about 2.5hrs, during which we’ll take a break for a homemade refreshment, such as our warming Wild Mushroom Soup or Elderflower Champagne!

After the walk we will end the day with a tasty wild food meal. This will include a dish created from what you find on the day, plus pre-prepared, homemade ‘foragy’ treats and tasters.

All of our food is seasonal, so what you are served depends on what is growing at that time of year. In Spring we will be making use of the fresh wild greens and in Autumn, the array of tasty wild mushrooms that the area has to offer.

You will receive a comprehensive set of Wild Food UK ‘Course Notes’ a few days after your course. This email will contain links and articles relating to the plants and mushrooms we discovered or discussed during the day.

There are toilet facilities available.

The Ewhurst Estate regularly hosts photographers and recordists, so please be aware that there is a chance of being exposed to social media/publications during your visit. We need to request your permission before entering the Estate, so will email a consent form to you once you have booked onto the course.
