ABOUT THE COURSE
These courses will be held around the southern part of the vast Bathurst Estate. The area we use has a mixture of open grassland and woodland, which provides a range of wild foods throughout the year.
We’ll be meeting at the Tunnel House Inn, a charming 18th Century Cotswolds Inn on the outskirts of Coates, a small village just west of Cirencester. It is within easy reach of Stroud, Gloucester, Cheltenham, Chippenham, Swindon and even Marlborough.
The course starts with a short introduction on what to look for and a brief of the general countryside codes, where they relate to foragers. Drinks are available from the pub.
Then we’ll set off on a roughly 2.5 hour walk around the Bathurst Estate, teaching you how to identify the different edible and poisonous plants, flowers, fruits and mushrooms that we find.
We will stop along the way for some seasonal homemade refreshments such as our lovely hogweed and wild garlic soup, elderflower champagne or fruit leathers.
Then it’s back to the Tunnel House Inn for a wild food lunch based on what we have found. All of our food is seasonal so what we make depends on recent weather and what is around at that time of year. In spring we will be making use of the wild garlic and in autumn the array of tasty wild mushrooms that the woodland has to offer.
After the course we will email you a list of everything we talk about on the day; to help you remember what you have learnt.
